What is Huangshan Mao Feng?
Huangshan Mao feng tea or Yellow Mountain Fur Peak is a green tea produced in Huangshan, Anhui province of China. It is one of the most famous loose leaf green teas in China. Huangshan Mao Feng is renowned for its small white hairs which cover the leaves and the shape of the processed leaves.
Characteristics of Huangshan Mao Feng
Huangshan Mao Feng is made from bud tea with one unfolding leaf, so after processed, there will be silvery hairs on the tea as a symbol of delicacy. Huangshan Mao Feng has a short and tight shape with emerald leaves and silvery hair. It has a light fruity aroma and a clean and sweet taste.
Production Processes
1. Plucking
During Spring, usually between late-March to early April, farmers will start tea plucking. The standard for premium Huangshan Mao Feng tea leaves is one bud with one unfolding leaf with an overall length of 1.5-2cm.
2. Withering
Spread the tea leaves on a dry and cool surface to reduce moisture until it is ready for the next step.
3. Fixation
The temperature of the teawok should be about 150℃ during the tea fixation. The fixation process will last for around 3-4 minutes until the tea leaves are soft and the grassy aroma turned to be floral.
4. Roasting
To finally dry up the tea leaves at a low temperature until the tea is ready for packaging.
